Who said that a healthy, plant based diet has to cost a lot? And for that matter, who said that healthy food is blunt tasting? Healthy quinoa Buddha bowl is a glorious meal that will make you reevaluate all the popular misconceptions. It is the ultimate myth buster in the form of a delicious meal!

I was asked by a friend, The Cyprus Vegan, to prepare an affordable, tasty meal as a part of a 7 day vegan meal plan. I anticipate you all enjoy this super easy, cheap, nutritious, plant-based meal. Hopefully you will love this healthy quinoa Buddha bowl recipe and be inspired to embrace veganism.

Buddha Bowls

A Buddha bowl refers to a hearty, filling dish made of various greens, raw or roasted veggies, beans and a healthy grain like quinoa or brown rice. Ever since veganism has gone mainstream, Buddha bowls have become very popular!

Buddha bowls are named after Buddha’s round belly! ♥ I usually also add nuts and avocados to my Buddha bowls. Makes them much more filling and tasty!

But enough with the introductions, let’s get to today’s recipe!

Healthy Quinoa Buddha Bowl [For Under 2 Dollars]

Today’s meal is specifically designed to cost less than 2 dollars/1.50 euro per serving. It’s a testament to the fact that healthy plant based food can be both affordable and delicious! There are links of the foods so you can see for yourselves that that is exactly what each item costs!

Healthy Quinoa Buddha Bowl [For Under 2 Dollars]

Ingredients (4 servings):

Healthy Quinoa Buddha Bowl [For Under 2 Dollars]

Method:

  • In a pan, add 1/2 a tablespoon of olive oil or coconut oil. Cut 1 onion into small pieces and saute for a couple of minutes with a sprinkle of salt (optional) and a dash of freshly ground black pepper. Add the quinoa and 2 cups of water and let it cook for around 10-15 minutes.
  • Slice the rest of the onions and add them to an oiled skillet over medium heat along with 1 sliced garlic clove. Allow to saute for 2-3 minutes.
  • Cut the potatoes into small cubes and add them to the skillet along with the chickpeas, sweetcorn and cauliflower.
  • Add all your spices and tomato puree and stir. Allow to cook for 5 minutes and then add 1 cup of water and allow to cook for 15 minutes over medium heat.
  • Serve in a bowl along with seasonal veggies of your choice and a handful of nuts such as cashews.
