Today’s recipe is a healthy, juicy black bean & beetroot burger.  All the ingredients used in this dish have fantastic health benefits! Let’s take a closer look!

Black Beans

 

Like other legumes, such as peanuts, peas, and lentils, black beans are prized for their high protein and fiber content. In fact, one cup of cooked black beans provides 7.62g of protein and 7.5g of fiber. They also contain several other key vitamins and minerals such as iron, phosphorus, calcium and zinc.

There are several health benefits to consuming black beans. Here are a few:

Beetroot

Juicy Black Bean & Beetroot Burger [Vegan, GF]

We all love burgers! It’s a classic dish for parties and gatherings and also a kids’ favorite! This juicy black bean & beetroot burger is a great choice for both the health conscious and the ‘fast food’ lovers!

I’ll let you in on a little secret! It bleeds! But there is no blood or cruelty of any form involved! Just the deliciously sweet beetroot juices! Ah! Plant-based goodness in all it’s glory!

Here’s a list of the ingredients you will be needing:

Ingredients (8 Patties):

 

Method:

  • Place the chickpeas and black beans together in a food processor and blend for no longer than 30 seconds. It’s important that your burger retains a bit of texture.
  • Remove the mixture and place it in a bowl. Repeat process, this time with the carrots, beets, parsley,onions and garlic.
  • Place the second mixture to the same bowl and stir.
  • Add the oats, papkrika, salt & pepper, mustard and BBQ sauce to the mixture and stir.
  • Create patties using your palms. Keep your hands wet so that the mixture doesn’t stick.
  • Place in the oven at 200 degrees Celsius for approximately 40 minutes.

You can serve with some oven-cooked potato wedges and hummus! A glass of ice cold lemon infused water compliments the dish really well. Mmm, ideal!
