Sweet summery oat fruit cups is a delicious vegan dessert that is quick and easy to make! By now you know that I’m a fan of everything simple! Prior to going vegan, I practically never used my kitchen. But ever since I was introduced to a plant based diet, all I do is cook and create simple recipes that both novice and experienced cooks can make! I believe that the vegan lifestyle has inspired me to find the chef inside me and has turned me into a cooking junkie! I think that my need to promote veganism effectively has driven me to find my way around the kitchen! Because, what better way to get through to people than delicious vegan food? Trying new things and combining different flavors is now an activity that gives me joy and purpose.

Summery Vegan Dessert

In Cyprus, summer is almost all year round! Warm, sunny weather calls for refreshing desserts and what more refreshing than fresh, juicy fruit? Don’t get me wrong, chocolate is my one and only addiction but in the summer nothing beats the taste of fresh fruit. These summery oat fruit cups are ideal to have for brunch. They go really well with ice cold coffee. They are simply perfect for hot days! Our delicious, summery oat fruit cups can be ready in no time so there is no need for your friends to give you the heads up before their arrival! They only require 5 ingredients and the process is quick and simple!

Summery Oat Fruit Cups [Vegan, Gluten Free]

Summery oat fruit cups are vegan and gluten free! You only need about an hour to prepare them which makes them an ideal dessert for when you have ‘last minute’ company.  The best part is that you probably already have everything you need to make them in your cupboard! They are sweet, rich and indulging! You can fill them with any fruit you like but since cinnamon is a key ingredient, I believe that bananas work really well and compliment the taste of the oat cups immensely!

Enough talking! Let’s get cookin’! The summery oat fruit cups ain’t going to prepare themselves!

Ingredients (4 oat cups): 

 

Method:

  • Mush up a ripe banana in a large bowl
  • Add vanilla extract, cinnamon and golden syrup and stir
  • Combine with oats and mix well
  • Grease your small ramekins or silicon cups with a drizzle of coconut oil in order to avoid sticking
  • Fill the bottom and sides of your cups with about one tablespoon of oat mush. Press the mush firmly to mould into shape
  • Refrigerate for about 30′
  • Bake for around 30′ at 180 degrees Celsius
  • Let them cool, remove them from the pan and add whatever your heart desires!

Bananas and golden syrup and great for the filling but you can always choose your favorite fruits and nuts. You can also fill the bottom of your summery oat fruit cups with some vanilla flavored soy yogurt. Yum!
