Summer Mood

Summer is soon approaching and there is nothing better than a Mediterranean recipe to get us in the mood!

I can’t think of anything better than sitting by the sea, on a sunny day, eating gorgeous Mediterranean food while listening to the sound of the waves.

Dakos is a traditional Cretan dish. Mediterranean islands like Cyprus and Crete have cuisines that utilize a lot of fresh, locally grown ingredients and lots of virgin olive oil! The subtle taste of such dishes is perfect for warm weather. Light, yet filling and tasty!

Vegan Greek Dakos is a recipe that requires no prep whatsoever! Another reason why this dish is perfect for summer! No need to slave in the kitchen. Just relax and enjoy a wonderful meal with minimal effort!

What are Dakos?

Greek Dakos are a traditional meze or light meal on the island of Crete. It is a delicious dish with rusk, olives or capers, tomato, olive oil and oregano.

While the original recipe includes Feta (a traditional Greek cheese), it can be just as good in it’s vegan version. You can replace Feta with non-dairy cheese and there is even vegan Feta cheese available by GreenVieFoods.

You need very few ingredients for this Mediterranean recipe, most of which, you already have in your kitchen right now. Greek Dakos are essentially wheat or barley rusks. They come in different shapes and sizes. As an appetizer, I like to use the small round ones. Surely your local supermarket stocks a few Greek brands -so you can get the real deal- and you can even order them online here! Let’s go over the ingredient list!

Ingredients:

Execution:

  • Drizzle some olive oil onto your rusk. Sprinkle some salt and oregano on the bottom before adding the rest of the ingredients so it can soak up all the flavors.
  • Cut up the vegan cheese and all your veggies and place them on top of the rusk. Add extra oregano and olive oil to taste.
  • Pour some mild vinegar which helps soften the rusk as well as add to the taste.
