Eat Your Greens
It’s especially important to get your daily dose of fresh greens! Dark leafy greens are the most nutritious and calorie dilute foods on the planet! They have the most vitamin and mineral content per calorie than anything else.
Consuming dark leafy greens can be extremely beneficial for your health.
Some of the benefits include:
- They lower cholesterol
- Vitamin K, found in abundance in leafy greens, is critical in preventing certain age-related conditions.
- They are good sources of carotenoids lutein and zeaxanthin, which help filter high-energy light that may cause eye damage.
- The B vitamins help convert the carbs in food to glucose that the body can use as a fuel to produce energy.
- The slightly bitter taste of many leafy greens is a good sign: It reflects their high levels of calcium.
- A study in the Journal of the American Dietetic Association in 2011 linked a higher intake of these vegetables with a decreased risk of cancer.
Not A Huge Fan? Not A Problem!
I am a huge fan of big leafy green salads but some people find it hard to incorporate them into their diet. This is especially true for young children or people who are new to a plant-based lifestyle. Sometimes it’s just a matter or taste and/or habit. The more you eat them, the more your taste buds adapt to them and you learn to enjoy and even crave them.
If you have tried that but you still find that you have trouble getting them down, worry not! There are plenty of ways you can sneak in those greens!
5 Ways To Eat More Greens

1. Smooth Criminal
Yes! The answer to all you life questions is SMOOTHIES! What better way to kick start your day than with a huge smoothie or smoothie bowl? All you need is a blender or food processor. Any one will do. You can make them with fresh or frozen fruit depending on what consistency you prefer.
Take all your favorite fruit, chunk them in the blender with some plant based milk, water or ice and simply add your leafy greens to them as well! The greens have a very subtle taste and you end up not even realizing they are in there!
My favorite smoothie is frozen strawberries, coconut milk and fresh spinach! Divine! The combinations are endless so make sure you try different ones until you find the one you love.
You can top your smoothie bowls with granola & fruit!
Other leafy greens that you can add to your smoothies are: Kale, Lettuce, Chard, Beet greens, Arugula
You can even make Ginger Smoothie Shots!
2. When Life Gives You Lemons, Make Juice
If you have never added greens to your juices, I’m telling you, you are missing out! Juices taste so much richer with some kind of leafy green in them. You can find fresh juices at your local health stores or better yet, make them on your own if you have a juicer at home.
A few unbeatable combinations include:
- Green apple + Lemon + Carrot + Ginger + Arugula
- Strawberry + Pomegranate + Kale
- Green apple + Lemon + Celery + Cucumber + Spinach
- Mango + Pineapple + Spinach
- Mixed Berries + Banana + Bok Choy
3. Dress Up
Leafy green salads are not necessarily everyone’s cup of tea but bare with me! A nice creamy dressing makes all the difference in the world. You can take my word for it.
Salads don’t have to be boring and they certainly don’t have to consist only of greens. Think of all the ingredients that you can add to a salad to make it more palatable. Nuts, seeds, fruit, pasta, rice, legumes, beans. Practically anything you can think of! You can turn all your meals into salad meals if you wanted to!

Now to dressings! I can not stress enough how important dressings are! You can make your salads taste however you want! Don’t just go with the plain old ones. Spice things up a bit!
My favorite oil-free dressings include:
- Tahini + Lemon + Water + Garlic
- Soy sauce + Ginger
- Balsamic + Mustard + Black pepper
4. Let Them Stew
When I think of comfort food, warm stews usually come to mind! They are so rich and indulging and so popular in many cultures.
Stews usually include a creamy tomato sauce which just makes everything so tasty! I’m getting hungry just thinking about stews!!
Bean stews, dals, currys, chilis. You can incorporate your greens into all these recipes! And they will taste sooo good! The combination of flavors is just amazing.
Peas, spinach, kale, greens beans. All these can add value to your meal! And remember! Don’t be stingy with the spices!

5. Ain’t No Burger Like A Vegan Burger
Yes, you got that right! Vegan burger patties are a great way to snick in some greens into your daily diet! And you know what? Kids love them!
Get in all those essential vitamins and nutrients by eating burgers! Yes, that’s a thing! Healthy, nutritious, homemade, plant-based burgers.
Just throw in all your ingredients in a food processor (including your greens!), blend them up, pat them down and throw them in the oven!
You can make vegan burgers using a myriad of basic ingredients such as: oats, sweet potato, beans. You can add any kind of greens you want to the mix: spinach, broccoli, parsley, you name it!
