Hot Tip: Flax Seeds Instead of Eggs

This is the first time I’ve used flax seeds as an egg replacement and let me tell you, it worked out perfectly! I don’t generally do much baking so I didn’t get a chance to try flax eggs before. Whenever a recipe you are trying to veganize calls for eggs, you can opt for flax seeds. One egg = 1 tablespoon of flax seeds and 2 1/2 tablespoons of water. Veganizing all your favorite recipes just became that much easier!

Less Talking More Cooking!

Ingredients (15 servings):

  • 3-4 generous tablespoons raw cacao powder
  • 1 1/2 cup blanched almond flour
  • 2/3 cup coconut sugar or brown sugar
  • 200 g dairy free dark chocolate
  • 1/2 tablespoon baking soda
  • 5 tablespoons coconut oil
  • 1 tablespoon vanilla extract
  • some crashed sea salt (to taste)
  • 250 ml unsweetened soy or coconut milk
  • 1/4 cup unsalted almond butter
  • 2 flax eggs

  • Prepare the flax eggs by mixing 2 tablespoons of flax seeds with 5 tablespoons of water and letting the mixture sit fr about 15 minutes.
  • Preheat your oven at 180 degrees C.
  • Line a baking tin (around 20 cm) with grease-proof paper. **You generally want to use a square baking tin. Today I used a round one. It plays no role in the outcome! Only the fact the the outer pieces have a curved side! ♥
  • Place the chocolate in a heatproof bowl over a pan of simmering water and allow to melt. Then stir in the almond butter.
  • Remove from heat, allow the chocolate mixture to cool and then add the vanilla extract, flax eggs and coconut oil.
  • In the meantime, sieve the almond flour and cocoa powder and stir in the sugar, baking soda and a pinch of salt.
  • Add the coconut or soy milk to the flour as well as the melted chocolate mixture. Stir well until there are no flour spots.
  • Pour the mixture into your baking tin (lightly oil them first) and place in your preheated oven for roughly 20-25 minutes.
  • After taking it out of the oven, remember to allow it to completely cool down before cutting it into pieces! You can also melt some vegan chocolate and pour it over for a rich chocolaty glaze!

I seem to miss where you put in the coconut oil and the baking soda… :/

It was simply delicious! All my friends loved it (non-vegans included). I replaced half the milk for vegan Bailey’s 😉
