Chickpeas Are SOOO Versatile!

If you guys haven’t tried cooking with chickpeas yet, you are seriously missing out! They have such a unique texture and the taste varies depending on how you make them. Chickpeas have an awesome crunch to them that is like no other legume.

My pantry is always stocked up on chickpeas because they are really versatile and you can use them in every recipe imaginable. You can use them to make dals, chilis, stews, or even add them to salads to provide that extra bit of flavor and goodness. And of course you turn them into oven baked falafel! In terms of nutrition, they are a great source of plant protein, manganese, phosphorus, copper, and fiber.

As you guys may or may not know, I have recently eliminated oil from my diet. In a funny way it has been kind of liberating because being Greek usually means cooking everything in a ton of oil. It took me some time to learn to cook without it. But it’s really not as big of a deal as I thought it would be! With a few readjustments everything tastes exactly the same and you get rid of all those excess calories from fat that have close to zero nutritional value. Don’t be alarmed! I’m not a member of the ‘fat is bad’ police!  I am pro nutrition and against highly processed ingredients.

Today’s recipe is easy to make, affordable, healthy and above all, supremely delicious! I realize that falafel are usually deep fried but you really don’t need to go down that route! Our oven baked falafel, literally require almost no effort at all and you get all that yummy goodness in less than an hour.

There is no point in stalling so without further ado, let’s get to the nutritional information of today’s recipe!

Nutritional Information [Per Serving – 3 falafel patties]:

  • 320 calories
  • 50 g carbs and 12 g of fiber
  • 12 g fat
  • 15 g protein
  • 0 cholesterol
  • 1.5 mg manganese
  • 270 mg phosphorus
  • 1.8 mg zinc
  • 33 mg vitamin K

Ingredients [For 9 falafel patties]:

  • 250 g raw chickpeas [I advice against using canned in this recipe as the texture will not be the same]
  • 5 tbsp chickpea flour
  • 1 tsp baking soda
  • 1/4 cup fresh corriander
  • 2 large white onions
  • 2 garlic cloves
  • 1 tsp cumin
  • 3 tbsp tahini
  • salt & pepper to taste

Method:

  • Soak chickpeas overnight.
  • Add chickpeas along with the rest of the ingredients to blender or food processor and pulse until mixture is close to smooth. You can leave some small chunky bits in there.
  • Wet your hands and form little falafel patties. Don’t worry about the size too much! Dare to be different! 😉
  • Line your baking tray with parchment paper.
  • Bake for 30 minutes at 180 degrees Celsius.

Easy peasy! Grab some Lebanese pitta from the store for that authentic middle eastern experience. If you can’t find any at your local supermarket, just get some Greek pitta which is, to be completely honest, what I used! It’s equally tasty! And don’t forget to chop up some fresh tomatoes, onions and parsley to compliment your dish. And tahini… gotta have tahini!
